Grilled Shrimp Skewers
Try this healthy dish that will make children love seafood. The preparation is fun and you can make the recipe with the company of kids now that schools are closed.
1-1/2 pounds large shrimp, peeled and deveined
1/3 cup olive oil
2 large garlic cloves, minced
2 tablespoons lemon juice (about 1/2 lemon)
1 teaspoon Cajun seasoning
1/4 cup chopped parsley
fine sea salt
freshly ground black pepper
1 Cubanelle pepper, cubed
1 red bell pepper, cubed
1 orange bell pepper, cubed
1 yellow bell pepper
1/2 large white onion, cubed
1 pint cherry tomatoes
bamboo skewers, soaked in water
In a large bowl, combine olive oil, garlic, lemon juice, Cajun seasoning and parsley. Season with salt and pepper. Add shrimp and toss to coat. Marinate for 30 minutes in the refrigerator.
Preheat a gas grill or grill pan at medium-high to high heat.
Add vegetables to same bowl as shrimp; stir to coat with marinade. Skewer the vegetables and shrimp, alternating with peppers and onion and then shrimp. Use the cherry tomatoes to secure shrimp. Each skewer should fit about 3 shrimp.
Grill for about 3 minutes per side or until the shrimp turn pink. Yield: 4 to 6 servings.
